Heads & tails are two of our favorite things to grill if you decide to fillet your fish - they have plenty of meat and the bones add to the flavor and keep it moist - just butterfly the head so it opens up like a book and marinate in your favorite sauce or spices for a quick and delicious dish (don’t forget to eat the cheeks!).
