Just added: Black Cod and Sanddabs!

This weeks' "Catch of the Week" is from one of our favorite partner boats, F/V Miss Moriah based out of Half Moon Bay! We will be offering delicious Rockfish and Petrale Sole! Capt. Geoff Bettencourt and the F/V Miss Moriah are one of a very select handful of boats that are a part of the California Groundfish Collective.  This means that their every move is recorded by multiple cameras set up by the Nature Conservancy to ensure sustainablity and have a way to validate their accountability at sea.  The Miss Moriah has been fishing for black cod, until recently switching gear to focus on rockfish and flatfish like petrale and different types of sole.  This is one of the most closely monitored and regulated fisheries in the world and is the only ground fish fishery recognized by Seafood Watch as a Best Choice.

Our Rock Crab are caught by one boat out of Santa Cruz; there are only a small handful of boats catching these guys so you won't be finding them at your local grocery store! Due to a standing restaurant pre-order, we have extremely limited amount of Rock Crab - we will sell out, sorry!

We are also expecting a great haul of Local Squid from our partner boat in Monterey, so hop on these local favorites before the season starts the slow down.

The Details: 

Black Cod (also called Sablefish) is a special treat - arguably one of our favorite fish to eat here at FreshCatch!

Often called "butterfish" at the market to describe its unique and sumptuous flavor. We love it for its high omega 3 oil content (as high as wild salmon) which gives it a velvety texture, and delicate buttery taste that is unlike any other fish. Black Cod lends itself well to various cooking techniques and flavors but our favorite is still the classic Japanese preparation made famous at Nobu- miso marinated Black Cod (don't worry - we'll be including this in our recipes this week!). 

These fish are a common deep sea fish in the North Pacific Ocean - they like to hang out in the sea beds around 980 to 8,860 ft and are opportunistic feeders eating other fish, jellyfish, and squid. They mature quickly and can have long life spans (up to 90 years) although the average is closer to 20 years. They are one of two fish that make up the family Anoplopomatidae - the other member is also sold under the same market names (although it is part of a different genus and species). 

Our partners consider this fish to be a "Best Choice" because the fishery is well managed and there is little by-catch.

The Details: 

Sanddabs are one of California's better-kept seafood secrets, while plentiful in our area the catch often goes to restaurants rather than retail.They are a San Francisco specialty - these little delicate flatfish have been a favorite pan fried - a quick dip in an egg wash and then some bread crumbs and served with butter and lemon and fresh parsley. Tadich Grill has been serving them in the french style this way for over 160 years and they are still famous for them now! 


 We love them because they are sustainable and quick and easy to cook! Impress your friends and families as you pull up the tail end after a fast pan fry and watch the whole spine slide out like you would see in a classic cartoon. 


They have a delicate sweet flavor unmatched by any other pacific flat fish - we sell them pan-dressed (headed and gutted) with the bone in so they stay nice and succulent when pan-fried or grilled. Scales are tiny and need not be removed. 
Sanddabs inhabit the Pacific from Alaska to Central America but the commercial catch is restricted to the Pacific coast. They like to hang out at depths of 160ft to 490ft although young spend time in more shallow waters occasionally inhabiting tide pools. Our trawlers often catch them when they are targeting rockfish and Petrale Sole. 
Our partners at Seafood Watch consider sanddabs to be a Best Choice because their numbers are plentiful and the fishery is well managed.

The Details:

Petrale Sole is one of our local flatfish that lives near the sandy bottom of the ocean floor - it is considered one of the best West Coast Soles!

It has a beautiful white fillets that are light and flakey, with a delicate flavor and texture - a quick pan fry with butter, lemon, and herbs makes for the easiest and most delicious dinner!

These fish are caught in special light nets with holes large enough to allow smaller fish to escape. Underwater cameras are attached to them that allows our captain to target very specific schools of fish. Camera's on board the boat set up by the Nature Conservancy closely monitor what is brought on the boat to ensure 100% accountability and sustainability. Very few boats have this sort of outfitting which allows for nearly zero by-catch!

Our partners consider this fish to be a "Best Choice" because we work with boats that are members of the California Groundfish Collective which goes above and beyond our current regulations to ensure that every trip out to sea they make closely monitored and sustainable.

The Details:

Chilipepper rockfish are a common deep sea rockfish that our boats which operate with a trawl system often catch. These rockfish have a beautiful red skin (hence the name) and a nice flakey, mild, and firm meat that we love to use for tacos and fish and chips!

They travel in large schools and feed on small crustaceans, small squids, or small fishes such as anchovies, young hake, and small sardines. They mature quickly, reproduce in great volumes, and give birth to live young like many rockfish.

Now that we have built a stronger relationship with our partner fishing vessels we are happy to announce that we will be offering a seasonal selection of seafood which will be offered consistently each week in addition to our "Catch of the Week."  These are boats that we trust and know will offloading their catch within 48 hours of delivery.

Barnacle was started by Matt and Lia - they grew up in Southeast Alaska - and for years they have been making salsa and pickles from fresh Alaskan Bull Kelp for their friends and families.

"We realized we were making something special, a taste of home that we should share with more than our friends and family. Bringing the wild flavors of Southeast Alaska from our kitchen into yours. But, more than that, we want to work toward strengthening Alaska’s food system by producing tasty and nutritious products from abundant local resources.
