This week's "Catch of the Week" is King Salmon caught in Bodega Bay and local Halibut caught in Santa Cruz! We will have both fillets, specialty cuts and whole fish available! 

Get these guys while you can - they are everyone's favorite and the fishing conditions aren't aways this good - plus we are now vacuum sealing all of our orders so they are perfect to throw in the freezer for the future! 

 Pricing will be a little different for premium offerings so please take note! 

 In addition we have Market Squid from Monterey and Rock Crab from Santa Cruz!

California Halibut


When people ask us what is the best fish to try for people who don't like fish, we always tell them, Halibut! It is loved by all for being the trifecta of mild-moist-and firm meat that is easy to cook with and even easier to devour! It's a versatile fish that's perfect for bold flavor profiles - we especially love ours in curry or roasted in the oven with veggies and spices! 

Our local Halibut is actually a flounder - more closely related to a Fluke than a Pacific Halibut.  That probably explains why most people (especially sushi chefs) prefer our local halibut over it's Alaskan counterpart.  In sushi restaurants, it is highly regarded for its clean and fresh flavors and its buttery texture when served raw. 

All of our California Flounder (Halibut) are caught using traditional hook and line methods by small boats - usually no more than 2-3 people on board.  Currently we work with a handful of small halibut boats from San Francisco, to Alameda, to Santa Cruz, and they all use the same fishing method.  We meet with our partner boats late night Monday throughout the day on Tuesday, and then we spend Tuesday and Wednesday morning filleting and packaging your order.

Our partners at Seafood Watch consider these fish a Best Choice because the fishery is well managed, the fishing gear has little affect on the environment, and there is no by-catch.

Halibut Engawa

Engawa, or “hallway” in Japanese, is the fatty, delicate meat found around the upper edge of the halibut, below the dorsal.  It is prized for sushi because of its concentrated flavor and higher fat content.

 Halibut Engawa is delicious by itself, it also goes very well with fresh tasting condiments such as, grated radish with red chili pepper, sliced scallions and citrus soy sauce.

We will be offering 1/4 lbs (.25 lbs) shares of Engawa for $14/lb

Tail Portions 

Includes the whole tail section of the fish which we love to grill or bake in the oven! Lots of meat and not a lot of bones!

Half Moon Bay King Salmon

Fillets are back, so if this is your preferred cut and you don't want to buy a whole fish and do it yourself, then now is the time to jump on board!

Fillets freeze beautifully and will be delivered vacuum sealed for those of you planning for the future! 

Whole Fish is also available!

Enjoying a whole Monterey Bay King Salmon is an unforgettable experience. Luckily, salmon is one of the easiest types of fish to fillet, and it's forgiving on first timers!  We have a couple great video tutorials on our Salmon page that will help you break down your fish in no time!

All our Salmon are caught one at a time and handled with the utmost care.  

Our partners at Seafood Watch consider these fish a Good Alternative because the fishery in Oregon and Washington is not as well managed as they would like it to be, often times endangered King Salmon are caught in waters north of us; however, this rarely occurs down here.
 
 Full shares of King Salmon Fillets will be $28 and consist of at least 1 lbsof salmon fillet

Half shares of King Salmon Fillets will be $14 and consist of at least .5 lbs of salmon fillet

Whole fish are $19/lbs 

Specialty Cuts (Tail, Bellies, and Collars) $16/lbs

Our specialty cuts are some of our favorite parts of the fish, they usually include collars, tails, and belly sections - please note they do sell out quickly!

Seasonal Selections! 

Now that we have built a stronger relationship with our fishermen and women we are happy to announce that we will be offering a seasonal selection of seafood which will be offered consistently each Wednesday in addition to our rotating catch. 

Squid are back! We have several squid boats going out multiple times a week as well as our rock crab boat in Santa Cruz going who is currently taking time off of crabbing to focus on salmon! This allows us to always pick up our catch on a Monday or Tuesday to be delivered Wednesday, guaranteeing a fresh selection every week for our members!

Fresh Market Squid

 
Have you ever driven down Highway 1 at night and noticed a fleet of boats shining bright spotlights onto the ocean? This is part of our local squid fleet using their spotlights to attract squids into their nets! Our squid boats go out several times a week and land their catch in Monterey making them a consistent seasonal and sustainable selection that we are happy to offer every week to our customers while our boats are able to go out to sea.They are perfect for calamari or to spice up a delicious pasta dish! Squid will come whole so you will have the opportunity to learn a little squid anatomy and save the ink to use in your pasta or an inky Halloween-inspired dish that both kids and adults will love!

Our partners at Seafood Watch consider Market Squid caught with purse seine in California a "Good Alternative" as squid are an important part of the ocean food chain acting as both predator and prey for many different species and there is little assessment or regulations that limit the squid fishery at this time - but we hope there will be more soon!

Cooked Rock Crab Claws with Arms


Fresh Rock Crabs from Santa Cruz are a Seasonal Selection available to members each week! Captain Jason goes out twice a week to catch them and hand picks out the best and biggest of the bunch for us to cook up for our members early Wednesday morning. Rock crabs are a delicious and sustainable local alternative to the infamous Dungeness crab. Many restaurants like to use them as a substitute for Dungeness, but here at FreshCatch we like to think of them a little bit more like a Western cousin of the famous Florida Stone Crabs! They have big meaty claws and a rock-hard exteriors to protect their sweet centers. Most of their meat is in their claws and the arm attached to that claw so that is what we will be delivering with shares, the body meat is minimal making it perfect for stocks! There are only a couple boats catching these guys so you won't be finding them at your local grocery store!

This delicious and mineral-rich seasoning that can be sprinkled on anything for a savory kick. We love it on popcorn, eggs, toast, rice ... the options go on and on. Local, hand-harvested 50% wakame, 50% nori seaweeds make for an amazing salt-free seasoning.
